Thomas Gillgren is always spoken of fondly by the people who have worked with him and famously known for having a work ethic of giving 100% in whatever he does. After 3 decades of working and establishing bars, restaurants and even his own bartending school in London, Russia, Turks & Caicos, Azerbaijan, Dubai, Bali, Vietnam and more, he is now back in Sweden reconnecting with family and getting ready to be back in HCMC where he will continue where he left off - making waves in the music, arts and hospitality community. Tell us more about yourself Thomas
I love people, different cultures, traveling and I am a workaholic plus I have a restless soul. That’s why the hospitality industry is perfect for me. I opened over 40 different venues over the last 25 years and I have traveled and worked in over 10 different countries. Every day there is something new to learn and my strength, inspiration and my will to work comes from the smiles of my colleagues and the guests.
What triggered you in the color combo of the Color Palette #03?
It reminded me of a beach and the sea, the color of blue beige in the picture made me think of the sea and the beach. I thought of something refreshing, I could feel the wind blowing through my hair… It made me feel light, happy and relaxed.

The palette made me think of summer, the beach, the sea and the wind. So here is my refreshing summer cocktail called “Memories”
“Memories”
Ingredients:
Gin 40ml
Elderflower cordial 20ml
Fresh lime juice 10ml
Pink grapefruit soda 125ml
Fresh mint
Serve:
Served in a tall glass or wine glass over ice
